Parked in an industrial lot near the airport, Geste is one of the most discussed food trucks in Hawaii. The scampi-style shrimp plate — butter, garlic, lemon, served over two scoops of rice — is as good as it gets. Lines form before they open. Worth every minute of the wait.

A South Maui legend. Fish tacos, breakfast burritos, and acai bowls at the corner of the island's most beloved neighborhoods. The fish taco is the standard — grilled fresh fish, slaw, sauce, on a warm tortilla. Simple, perfect, unfussy. Over 20 years in Kihei and nothing has changed except the prices, slightly.

Chef Sheldon Simeon's casual counter is not technically a truck — it is a tiny counter-service spot — but it belongs in this list. The Nalu Surf Bar & Grill Food Truck — Kihei
Good burgers, fresh fish, cold beer — a casual South Maui institution that captures the beach town energy perfectly. Great for post-surf or post-beach fuel.
Isana — Kihei
The owner is a fisherman. That is all you need to know. John Arabatzis catches the fish himself — ʻōpakapaka, onaga, lehi, big eye tuna, mahi mahi, ono — and his kitchen serves it the same day. The sushi is as fresh as it gets on Maui, and the Korean-style tabletop BBQ adds another dimension entirely. Nearly 30 years in business. Ocean view. This is a sit-down restaurant, not a truck — but it belongs on this list because it is the definition of honest food.

The Mill House — Waikapū
Set inside the Maui Tropical Plantation in Waikapū Valley, The Mill House is farm-to-table in the most literal sense — many of the ingredients are grown on the surrounding acreage. The open-air dining rooms look out at the West Maui Mountains through restored sugar mill architecture. The Chef's Table experience on select evenings — a multi-course meal prepared in an open kitchen — is one of the more memorable dining events on the island. Not casual, not a truck, but deeply local and deeply rooted in Maui's agricultural story.
